Wash and boil rice with salt (rice to water ratio 1:2). I normally cook my rice in the microwave (2 cups rice, 4 cups water and cooked for 18 mins on high mode. Every microwave is different so cook the first few times under close supervision until you get the timing right). Allow the rice to cool.
Beat up 3 eggs with a little salt and pepper. In some oil, scramble the eggs and break it up into small bits.
Remove the scrambled egg from the wok and keep it aside.
Take some oil, add in soya sauce (may splutter) Quickly add in the rice. Mix together well. Add some pepper and sugar. (You could add MSG at this point if you like, I had left it out)
Add the eggs in and mix well.
Top it off with some spring onion greens.
