In a bowl make a sauce mixture. Add some chopped garlic, chopped green chillies, little fish sauce, some hoisin sauce, some oyster sauce, some soya sauce, little vinegar. (Please add little sauce at a time, you don't want it to turn overly salt or sweet) Mix it up well and give it a taste test.
If required add some sugar. Now add some water to this sauce mixture and tip in some corn flour. Mix it all together.
Marinate the fish pieces (I have used boneless cod fillets) with ginger garlic paste, pepper and salt.
In some oil saute a few green chillies and chopped garlic. Add the sauce mixture in.
Constantly stir until the gravy turns slightly thick. Then add the marinated fish in.
Cover and cook until the fish cooks through.
Note: You can add more water to the gravy, depending on the consistency desired.
