Fried Jumbo Prawns
Frozen (but you can use fresh) and instead of prawns can use fish chicken mutton paneer etcIngredients
- Marination of prawns 12 hours before frying
- 30 jumbo prawns (washed cleaned deveined and drain off all the water)
- 1/4 teaspoon Garam Masala powder
- 1/4 teaspoon Red chilly powder
- 1/4 teaspoon Turmeric powder
- 1/4 teaspoon Sambhar powder
- 1 tablespoon ginger garlic paste
- 1/4 teaspoon keya mixed herbs
- For coating
- 1 quarter plate Cornflour (of you want a crispy batter use semolina also known as rava or suji)
- Half of 1/4 teaspoon salt
- Half of 1/4 teaspoon Red chilly powder (add more if you want spicy)
- Mix all the above ingredients well and keep aside
- For egg wash
- Half of 1/4 teaspoon Salt
- 1 egg beaten
- Half of 1/4 teaspoon salt
- Half of 1/4 teaspoon of red chilly powder
- Mix all the above ingredients well and keep aside
Method
In a non stick frying pan add 20 tablespoon oil and heat it on the highest flame setting.
Once the oil is hot turn the gas down to medium flame setting.
Mix both cornflour mixture and egg mixture.
Dip the marinated prawns in this and gently slide the mixture coated jumbo prawns in the hot oil for frying.
After 2 minutes flip the jumbo prawns and fry on the other side.
After 2 minutes remove the jumbo prawns from the oil.
If you are not squeamish about deep frying then add more oil in the pan and deep fry the mixture coated prawns gently turning the jumbo prawns in oil after 2 minutes and then cooking further for 2 minutes.
After removing the jumbo prawns from the oil put them on kitchen towel or tissue paper to soak excess oil.
Serve hot with lime wedges.
Please note all ingredients have to be at room temperature.
