Papeta Par Eendu With Cheese / Egg and Cheese Over Potatoes

Ingredients

  • • Potatoes 6 cut into thin strips like Salli
  • • Onions 3 sliced finely
  • • Green chillies slit 4
  • • Ginger-garlic-green chillies- fresh haldi paste 1 tspn
  • • Eggs 4 whipped till frothy
  • • Amul cheese grated 1/4 cup
  • • Ghee/oil 2 tblspn
  • • Coriander leaves chopped finely
  • • Rai/mustard 1/2 tspn
  • • Jeeru/cumin seeds 1/2 tspn
  • • Haldi 1/4 tsp
  • • Red chilli powder 1/2 tspn
  • • salt to taste

Method

    1...Heat ghee oil Add Rai, jeera , hung & curry leaves and allow them to splutter.
    2...Add onions and green chillies, and saute till onions turn translucent.
    3...Add ginger-garlic-green chilli- haldi paste. Saute further.
    4...Add the potatoes, haldi, red chilli powder and salt and mix well. Cover the pan with lid and lower the flame and allow to cook till the potatoes are cooked well till tender.
    5...Once cooked, level the potato layer with a spatula. Pour the whisked eggs all over the potato layer, sprinkle the grated cheese and chopped coriander and cover the lid and allow the eggs to cook till a nice soft layer. Do not allow it to harden a lot.
    Cut to pieces and serve with hot chapattis.
