Pasta and veggies in tomato gravy

Ingredients

  • Pasta
  • Salt
  • Water
  • Oil
  • Garlic (finely chopped)
  • Mixed herbs (Herbes de Provence, Thyme, Red Chilli Flakes)
  • Tomato paste
  • Sugar
  • Mixed Veggies (Baby Broccoli, Green Beans, Baby Corn)
  • Parmesan Cheese

Method

  • Step 1

  • Boil the pasta as instructed on the packet and keep aside. I normally add salt to the water in which the pasta boils.

In a pan, add some oil, chopped garlic, mixed herbs (I used herbes de provence, thyme, red chilli flakes). Then add in 2 tbsp of tomato paste, salt and sugar. Pour some water, so that the gravy can coat the veggies and pasta well.

  • Add in the veggies (I used baby broccoli, green beans and baby corn). Cook for a few minutes and then toss the pasta in.
  • Step 4

  • Cook for a few minutes until all is well combined together.

 Serve with a sprinkling of parmesan cheese.
