Ingredients

  • Egg on Potatoes Ingredients
  • 8 big potatoes or 1 kg potatoes chopped in triangles (depending on weight as the weight should be 1 kg)
  • 2 medium tomatoes grated
  • 3 medium onions chopped small
  • 1 green chilly deseeded and chopped (if you like your food spicy add more chillies and don’t deseed them)
  • 1 teaspoon whole cumin whole (for frying)
  • 1 teaspoon whole black mustard seeds (for frying)
  • 1/2 small cup oil (for frying)
  • 1 handful coriander bunch chopped
  • 1 tablespoon or 2 teaspoons ginger garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon MTR Sambhar masala (you can use any sambhar powder you like)
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon black mustard seeds
  • 1/2 teaspoon Salt as per requirement
  • 15 tablespoon oil for tempering

Method

    Egg on Potatoes Method
    Cut potatoes in thin small triangles or pieces.
    Par boil potatoes in turmeric powder and salt for approximately 10 minutes in water in deep base pan on highest flame setting. Potatoes should be fully submerged in water. Par boiled potatoes should be firm and not mushy.
    After 10 minutes as water boils remove it from the gas and drain all liquid from the potatoes.
    Till the time potatoes are boiling add whole cumin and whole black mustard seeds in the oil n a non stick pan and stir fry them on the lowest flame setting for a few seconds till they pop. Stir
    continuously so onion doesn’t burn.
    Till the onions are frying and potatoes are boiling grate tomatoes and keep aside.
    Once the onions are browned add grated tomatoes, ginger garlic paste and stir fry on the lowest flame setting till the oil starts to leave the non stick pan.
    Add chopped chilly mix well and fry.
    Add grated tomatoes, ginger garlic paste, sambhar powder, cumin and mix powder mix well and fry.
    Cook it all for approximately 5 minutes on lowest flame setting.
    Add chopped coriander mix well and fry.
    Taste spices and salt if needed add more and mix well and fry.
    Add par boil potatoes mix well.
    Taste spices and salt if needed add more and shut the lid.
    Cook on lowest flame setting for approximately 5 minutes or till potatoes are fully done.
    Make sure that after you put the lid on no water should seep into the potatoes when cooking.
    Instead of making eggs on potatoes follow the steps for Potato Omelette.
    Serves 4 if making only potatoes.
    Assembling the Omelette
    Use the same ingredients and method of Egg on Potatoes and with the left over cooked potatoes follow these steps.
    Take left over cooked potatoes and beat 2 eggs into it.
    Once all the potatoes and eggs are mixed thoroughly take a non stick frying pan and add enough oil to stir fry.
    Heat the oil on the lowest flame setting.
    Once the oil is heated add the egg potatoes beaten mixture in the pan to make an omelette.
    Cover the pan to cook faster.
    After a minute flip the omelette to cook the other side.
    Keep flipping every minute till the potato omelette is done on both sides.
    Serve hot with a lime wedge, bread or chapatis, and ketchup or pickle.
