Ingredients
- Potatoes 2 cut into pieces
- Brinjals 2 cut into pieces
- 1 tbsp cooking oil
- 1/2 tsp cumin seeds
- 1 onion chopped finely
- 1 tbsp ginger garlic paste
- 1/2 tsp green chilli paste
- 1 tomato finely chopped
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- salt as per taste
- 1/2 tsp coriander powder
- handful of chopped coriander leaves

Heat oil in a pan. Add jeera seeds. Let them splutter.
Now add the chopped onions and saute over medium flame for 3-4 minutes.
Add ginger garlic and green chilli paste. Cook for another 2 mins.
Add tomatoes, and keep stirring till the oil oozes out. Add potatoes and cook for 3 mins.
Now add brinjal and salt. Add water and cover and cook for 15 mins. Keep stirring in between. Garnish with coriander leaves and serve with hot phulka rotis.
