Brinjal and potato Subzi

Ingredients

  • Potatoes 2 cut into pieces
  • Brinjals 2 cut into pieces
  • 1 tbsp cooking oil
  • 1/2 tsp cumin seeds
  • 1 onion chopped finely
  • 1 tbsp ginger garlic paste
  • 1/2 tsp green chilli paste
  • 1 tomato finely chopped
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • salt as per taste
  • 1/2 tsp coriander powder
  • handful of chopped coriander leaves

Method

  • Step 1

  • Heat oil in a pan. Add jeera seeds. Let them splutter.
  • Step 2
    4 mins
  • Now add the chopped onions and saute over medium flame for 3-4 minutes.
  • Step 3
    2 mins
  • Add ginger garlic and green chilli paste. Cook for another 2 mins.
  • Step 4
    7 mins
  • Add tomatoes, and keep stirring till the oil oozes out. Add potatoes and cook for 3 mins.
  • Step 5
    15 mins
  • Now add brinjal and salt. Add water and cover and cook for 15 mins. Keep stirring in between. Garnish with coriander leaves and serve with hot phulka rotis.
