In some Oil/ butter add lots of finely chopped garlic. Add 2 tbsps of Plain flour. Whisk it together. Slowly add milk, little at a time and keep whisking, until it all combines well and turns into a creamy consistency.
Then add salt, red chilli flakes, onion granules, pepper garlic powder, oregano, thyme, basil, italian seasoning (any herbs of your choice).
Then tip in the spinach and cook until the spinach wilts completely. Then add in some grated cheese. Add some tomato ketchup (optional). You can add a little water, if you find the sauce very thick.
In another utensil, boil adequately salted water with a little bit of oil. Add the pasta to the boiling water and cook as per the packet instructions. Avoid overcooking the pasta.
In the warm simmering sauce add the hot pasta. Advised to always add hot pasta to a sauce, it tends to absorb flavors better. Mix together, check for seasoning. Enjoy with garlic bread.
