Butter Chicken
Butter Chicken by Mohnaz Balsara- 1 tablespoon oil
- 1 tablespoon butter
- 1 medium onion finely chopped
- 1 teaspoon ginger finely minced or grated or use paste
- 2-3 cloves garlic finely minced or crushed
- 1&1/2 pounds or about 2-3 boneless skinless chicken breasts cut into 3/4 inch chunks (you can also use boned chicken pieces)
- 4 tablespoons or 8 oz tomato paste or tomato sauce
- 1 tablespoon garam masala powder
- Half of 1/4 teaspoon red chili powder (if you like spicy increase to quantity)
- 1 teaspoon fenugreek powder
- 1 teaspoon cumin powder
- 1 teaspoon salt or as per requirement
- Half of 1/4 teaspoon black pepper powder (if you like spicy increase to quantity)
- 1 cup heavy cream or yogurt if you want low fat
Method
Heat a large skillet or medium non stick saucepan on medium flame setting.
Add oil, butter, onions mix well and saute onions until lightly golden for approx 3-4 minutes.
Add ginger garlic mix well and saute for 30 seconds stirring continuously so that it doesn’t burn nor stick to the pan.
Add chicken, tomato paste, spices mix well and cook for approx 5-6 minutes or until everything is cooked through.
Add yoghurt or heavy cream mix well and simmer on lowest flame setting for approx 8-10 minutes stirring continuously so that it doesn’t burn nor stick to the pan.
Serve with over steam white long grain basmati rice or naan or roti or paratha.
