Kurkure Bhindi (Shallow Fried Stuffed Ladyfingers)

  • Half of 1/4 teaspoon Aamchur powder
  • Half of 1/4 teaspoon powder turmeric powder
  • Half of 1/4 teaspoon Red chilly powder
  • 250 gms Ladyfingers
  • 4 tablespoon Gram flour
  • Half of 1/4 teaspoon Salt as per requirement
  • 100 gms peanuts

Method

    Remove the skin of the peanuts.
    Heat up a non stick frying pan and dry roast whole peanuts on lowest flame setting for a couple of minutes constantly stirring so that peanuts don’t burn.
    Remove roasted peanuts and put the gram flour in the pan to dry roast on lowest flame setting for a couple of minutes constantly stirring so that the flour doesn’t burn.
    Put the roasted peanuts into the grinder to make a coarse powder out of peanuts.
    Mix all ingredients in a plate and keep aside.
    Wash the ladyfingers and drain off excess water.
    Remove the top and bottom part of the ladyfingers and make a slit in them.
    Add the mixed ingredients in the slit of the ladyfingers.
    Take the non stick frying pan in which you dry roasted peanuts and gram flour wipe all the remnants with a tissue paper or kitchen paper.
    Add oil and heat it on highest flame setting for a couple of seconds.
    Turn the gas to medium flame setting and shallow fry the stuffed ladyfingers.
    Don’t overcrowd the non stick frying pan by adding too many ladyfingers.
    Once golden brown remove the stuffed ladyfingers and serve hot with a wedge of lime.
