Drumstick Sambar Recipe

Adding onions in the sambar makes it flavourful. (Do not add onions if you do not eat onions). If you are short on time instead of making sambar powder at home you can also use store brought sambar powder.

This drumstick sambar is versatile and can be served with rice, idli, dosa, medu vadai or uttapam. if making the sambar for idlis or dosa then make it of medium consistency. If making for rice then you can add less water and make a slightly thick sambar.

  • Sambar Powder Ingredients
  • 1 teaspoon oil
  • ½ teaspoon fenugreek (methi)
  • ¼ cup coriander seeds
  • 1 tablespoon cumin (jeera)
  • 1 teaspoon urad dal
  • 1 teaspoon chana dal
  • 2 dried red chilies deseeded (if you like spicy add more and do not deseed)
  • 5 curry leaves
  • Pinch asafoetida (hing) (optional)
  • Sambar Ingredients
  • 3 teaspoon oil
  • 1 teaspoon mustard
  • 1 dried red chilly deseeded (if you like spicy add more and do not deseed)
  • Pinch asafoetida (hing) (optional)
  • 5 curry leaves
  • 7 small onions cut into halves (if you do not eat onions do not add it)
  • 1 tomato finely chopped
  • ½ teaspoon turmeric powder
  • 1 teaspoon salt
  • 20 pieces drumsticks
  • 2 cup water
  • 2 cup toor dal
  • ½ cup tamarind extract (optional)
  • 2 tablespoon coriander finely chopped

Method

    In a deep dish non stick pan heat 3 tablespoon oil and splutter tempering.
    Add onions and saute for 2 minutes. (Omit this step if you do not eat onions).
    Add tomato and saute until tomatoes soften.
    Add turmeric, 2 tablespoons sambar powder and 1 tablespoon salt.
    Saute for a minute until spices turn aromatic.
    Add drumsticks mix all ingredients well and cook.
    Add 2 cup toor dal and 1 cup water.
    Adjust the spices salt and consistency of water as required.
    Cover the pan and boil for 5 minutes or until flavours are absorbed well.
    Optional add ½ cup tamarind extract and stir well. Continue to boil for 5 minutes or until the raw flavour of tamarind is gone.
    Add coriander and enjoy hot drumstick sambar with rice, idli, dosa, medu vadai, uttapam.
